Friday – day off and Christmas dinner with a friend. Saturday – errands and shopping and a Christmas potluck party that went on into the wee hours. Sunday – relaxing day at home. Monday – two afternoon appointments and… OH NO! I never got around to planning my Meatless Monday dinner!
Oops.
I could have – no, should have – figured out what I was going to make when I had the time to do so on Sunday… but for whatever reason, I didn’t. So dinnertime today found us eating beans in tomato sauce on toast (minus the toast for me) for our ever-so-exciting (NOT) Meatless Monday meal.
I guess they can’t all be winners.
I’ll have to plan better for next Monday – especially since there are two appointments on my calendar for that day as well. Any inspiration you can toss my way for a quick and easy Meatless Monday meal is always appreciated! 🙂

Our favorite go-to when there’s nothing else in the house is spaghetti with Prego garlic and onion sauce. No meat. You may be trying to avoid pasta, though. We usually eat meatless a few times a week. I have some great vegetarian recipes. The best thing is to make a veggie (or veggie and pasta) casserole, which for two of us lasts 2-3 days. Love those leftovers!
